Shirasu fishing is actively carried out in the rich fishing grounds off the coast of Kobe. In particular, Kobe fishermen are permitted to fish for shirasu before dawn.
Shirasu, which is in season during the fall, generally refers to anchovies.

In the early morning, before shirasu begin feeding on plankton, the water clarity is high, and the shirasu caught are free of any off-flavors, making them exceptionally fresh.
